Pumpkin Chocolate Chip Cookies (v +gfo)
Okay, I have to admit, most months out of the year a Pumpkin Chocolate Chip Cookie wouldn’t be my first choice…but October hits and BOOM, I NEED all things pumpkin. I’m fairly certain everyone else is on the same page. I did multiple test runs of these cookies and force fed them to all my friends and neighbors, unanimously they agreed, DELICIOUS.
These cookies encompass everything a cozy cookie should. They are chewy, thick, full of all our favorite fall flavors, mixed in with gooey chocolate chips. And of course, they are vegan.
Bring a batch to a halloween party or curl up on the couch with a cookie or two. Whatever you do, you will not be disappointed, and maybe, JUST MAYBE, you’ll even want one after October ends…
Step 1:
Mix together vegan butter & sugars
Step 2:
Add pumpkin, molasses, vanilla, almond milk & pumpkin, mix well
Step 3:
Stir in flour, baking soda, salt & pumpkin pie spice

Scoop cookies onto prepared baking tray, about two inches apart. Bake at 375 f for 10 minutes or until edges are golden brown
Step 6:
Let cool on baking tray for 20-30 minutes and enjoy!
Vegan Pumpkin Chocolate Chip Cookies
Ingredients
- 1/2 cup (one stick) room temperature Vegan butter, I use Earth Balance
- 3/4 cup organic brown sugar
- 1/2 cup organic unrefined granulated sugar
- 2 tbsp organic black strap molasses
- 1 tsp organic pure vanilla
- 2 tbsp almond milk (or other plant based milk)
- 1/3 cup organic pumpkin puree (not pumpkin pie filling)
- 2 1/4 cup all purpose flour
- 1 tsp baking soda
- 1/2 tsp sea salt
- 2 tsp pumpkin pie spice
- 2 cups vegan chocolate chips
Instructions
- Pre-heat oven to 375 °F (190 °C). Line a large baking tray with parchment paper (or a silicone baking mat for a more eco friendly option)
- In large bowl, mix together butter and sugars
- Add vanilla, molasses, pumpkin, almond milk and mix well
- Mix in flour, baking soda, sea salt, pumpkin pie spice
- Fold in chocolate chips
- Using a cookie scoop (2 tbsp) drop cookies into rounded balls about 2 inches apart onto lined baking tray.
- Bake 10 minutes or until edges are golden. Let cool on baking tray. Enjoy!
