Coconut Date Energy Balls (v+gf)
I am a huge Earthy Andy fan and these coconut date energy balls are adapted from her Salted Caramel Date ball recipe!
They are the perfect snack for literally any occasion. I eat them for breakfast, take them to beach, grab one when I’m on the go, or when I want something sweet. They are crunchy, coconutty and nutritious.
This recipe makes A LOT of date balls, you can easily cut it in half but I don’t recommend it. You’ll want the whole batch ;)
You’ll Need: Medjool Dates, Coconut Sugar, Coconut Oil, Coconut Shreds and Crispy Rice Cereal
Step 1: Pit & Chop your dates. Place in a medium sauce pan (or pot) along with your coconut sugar, water and oil. Cook until a thick paste forms.
Step 2: Transfer mixture to a large bowl, add in 1/2 cup of coconut shreds and crispy rice cereal. Mix until well blended
Step 3: Using a cookie scoop or spoon, scoop 2in balls and roll in your remaining coconut shreds. This will be sticky!
Place in fridge to set and enjoy!
Coconut Date Energy Balls
Ingredients
- 3 cups Medjool Dates
- 1 cup Coconut Sugar
- 2 tbsp Coconut Oil*
- 2 tbsp Water
- 1 1/2 cups Desiccated (or shredded) coconut
- 4 cups Crispy rice cereal*

Notes
- Make sure you are using an organic, unrefined coconut oil & a brand that does not use Monkey Labor. I like Vita Coco, Dr Bronners, Spectrum or even Trader Joes!
- Do not use PUFFED rice cereal or rice crispy treats, try and find an organic crispy rice cereal. The only ingredient should be rice. Most health food stores will have it in bulk!
